Origin Story

As part of our first wave of single origin releases from the Peru harvest, we are showcasing this coffee from Rayos del Sol. In collaboration with our Direct Trade partners at Origin Coffee Lab, we have worked with this farm since 2015 and have seen their quality evolve year after year. This coffee is produced by Percy Pintado of the Pintado family, whose farms neighbor each other in Alto Ihuamaca, a small town nestled between two forest conservation areas in the Cajamarca region of Peru’s northern highlands. Rayos del Sol has continued to offer sweet and elegant coffees, with this year’s selection being no exception.

Our first Peru single origin release of this season is from Rayos del Sol - a farm we have worked with for many years that has continued to offer sweet and elegant coffees, with this one being no exception.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from intelligentsia.com.
