Tucked into the slopes of the Andes in the community of San José del Alto in Jaén, Cajamarca, La Palestina is a storied place where, year after year, we find some of our favorite coffees from Peru. Rather than a single farm, it represents a patchwork of small parcels tended by the Alarcón Coronel family, who established their roots in the region decades ago. Over time, both the family and the farm have grown, and today La Palestina stands as a model for quality coffee production and a hub for a family deeply committed to their craft. Bringing together a mix of varieties planted across the farm, this coffee offers comforting notes of clove, bright orange zest, and butterscotch sweetness.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from Intelligentsiacoffee.com.
