Red Striped Bourbon is a naturally occurring field variant of Red Bourbon, first noticed when some cherries developed distinctive orange stripes along their red skins. Intrigued by this anomaly, a farmer began separating and tasting these cherries, discovering they offered a unique cup profile. Today, the variety is cultivated intentionally at Finca Juan Martín, an experimental farm located at 2,050 meters in the Sotará region of Cauca, Colombia that is operated by our partners at Banexport.
This lot was selectively harvested at peak ripeness—measured at 20° Brix—then disinfected, sorted by size, and pulped. Fermentation took place in a stainless steel bioreactor, where naturally occurring yeasts metabolized sugars in a controlled environment to enhance the variety’s expressive flavors. After being washed three times, the coffee was dried in an innovative solar dryer designed to simulate the warm, dry conditions of East Africa. Heated air circulates through modular, three-tier
