Origin Story

Fazenda Santuário Sul is a coffee nerd's dream farm. Inspired by his travels to Intelligentsia's Extraordinary Coffee Workshops, Luiz Paulo planted over 30 exotic coffee varieties on 80 hectares of land. He has paired his desire for new genetics with a passion for processing. The seeds for this Geisha lot came from Panama which is where this highly sought after variety was (re)discovered in 2004. Luiz Paulo ensured an exceptional cup quality through careful processing. This lot underwent an anaerobic fermentation process for 72 hours before it was dried in a Blue House that is equipped with a special material to reflect harsh wavelengths of light. The result is a slow drying process to ensure a uniform and sweet cup quality.

How To Brew

Recommended Method Pour Over

    Boil Water 205 - 216 F
  2. 02.
    Weigh Coffee 1g of coffee per 18g of water
  3. 03.
    Drop In Filter Add filter to equipment
  4. 04.
    Grind Coffee Grind coffee and add to filter
  5. 05.
    Add Water Add water in stages
  6. 06.
    Remove Filter Enjoy your coffee!
