This washed Castillo lot comes from neighboring farmers in the renowned Nariño region of southwestern Colombia. The farmers carefully handpicked coffee cherries, floated them in water to further sort for ripeness, and then rested them in open tanks for 12 to 14 hours. After pulping, the coffee underwent a traditional washed process, fermenting for 24 to 48 hours — depending on ambient temperature — to break down the remaining mucilage for easy removal. Finally, the beans were carefully dried for 15 to 21 days.

Castillo was developed by Cenicafé, Colombia’s National Coffee Research Center, and introduced to farmers in 2005. The variety has since been widely adopted due to its resilience against coffee leaf rust, a devastating fungus that thrives in rainy conditions.
