A new coffee from old friends, this lot comes from a familiar staple on our menu: the Juan Martín farm in Sotará, Cauca. Always exploring new techniques and varieties, the team at Juan Martín acquired Bourbon Sidra seedlings, and this marks our first time purchasing this unique offering from them. The exact origin story of Bourbon Sidra, sometimes simply called Sidra, is unclear. It arrived in Colombia from neighboring Ecuador and was originally believed to be a mutation or hybrid of the esteemed Bourbon variety. Later genetic testing suggested that it may actually be an Ethiopian Landrace variety, meaning it can be traced back to Ethiopia but has evolved and adapted naturally over time. Whatever its true lineage, Bourbon Sidra has gained popularity in recent years for its excellent cup quality, and that's exactly what drew us to this lot.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from Intelligentsiacoffee.com.

    Drop In Filter Add filter to equipment

    Grind Coffee Grind coffee and add to filter
