We traveled to Cauca, Colombia to participate in the Auction for Peace, where we secured one of our favorite coffees of the year: this Pink Bourbon from Aison Correa Gironza. Placing 9th out of more than 500 coffees, this honey-processed lot from a very limited harvest shines with jammy fruit notes and lively tangerine acidity.

In September 2025, we traveled to the remote Andean town of Bolívar, Cauca, where we participated in the Auction for Peace. Created to showcase the exceptional quality of coffee produced throughout Cauca, the auction was a true celebration of the beauty and diversity of a region long affected by conflict.

Only the finest cherries were selected and then honey processed, leaving a layer of the sticky-sweet fruit pulp intact as the coffee slowly dried. Concentrated jammy fruit notes and lively tangerine acidity create a striking impression in the cup, reflecting the care that helped it rise to the top ten among more than 500 lots submitted to the auction.

How To Brew

We recommend starting with a 1:18 coffee-to-water ratio, which provides an excellent total extraction level and maximizes flavor pulled out of the ground coffee. For our single origin coffees we recommend a pour over method either on a Chemex, V60 or Kalita Wave on a 5 or 6 grind setting if you are ordering from Intelligentsiacoffee.com.
