A new coffee from old friends, this lot comes from a familiar staple on our menu: the Juan Martín farm in Sotará, Cauca. Always exploring new techniques and varieties, the team at Juan Martín acquired Bourbon Sidra seedlings, and this marks our first time purchasing this unique offering from them. The exact origin story of Bourbon Sidra, sometimes simply called Sidra, is unclear. It arrived in Colombia from neighboring Ecuador and was originally believed to be a mutation or hybrid of the esteemed Bourbon variety. Later genetic testing suggested that it may actually be an Ethiopian Landrace variety, meaning its roots trace back to Ethiopia but have evolved over time through natural selection. Whatever its true lineage, Bourbon Sidra has gained popularity in recent years for its excellent cup quality, and that's exactly what drew us to this lot.
