The Variety
Spring
Yesterday marked the first day of spring—the vernal equinox—in the Northern Hemisphere. The tension of the transition was on full display here in Chicago. We woke to a thick blanket of wet snow, only for the sun to break through in the early afternoon and melt away any traces of winter's lasting grasp on the early morning hours. If you were up too late the night before cutting all your pants into shorts and slept through noon, you might not have known it snowed at all. The day was a perfect representation of the push-pull that defines moving from one season into the next. Our coffee menu, too, will transition in the coming months as coffees from our Southern Hemisphere partners (like Peru and Burundi) make way for those from the Northern Hemisphere—Costa Rica, Ethiopia, and Guatemala, to name a few—arriving from late spring into summer.
The Variety
Fresh Crop
In Greek mythology, Persephone, the namesake of our spring blend, is linked to nature’s cycles, particularly the return of spring and the revival of plant life. A fresh start, fresh air, and fresh crops. Picture tulips sprouting from garden beds and the tips of barren trees speckled with green as buds make their slow yet valiant push to become leaves, flowers, and fruit. Coffee plants follow a similar rhythm. After harvest, depleted from a season of all-out effort, they regroup. In time, nourished by rain, sun, and care, they sprout buds, then strikingly aromatic flowers, and finally small, dense cherries that slowly ripen to a vibrant purple-red—a visual cue that they’ve reached their peak and are ready to be harvested.
Our coffees showcase the culmination of nature’s work, elevated by the minds and hands that tend the soil and plants, and by those who meticulously pick and process each bean. This year's iteration of Persephone is no exception.
The Variety
Colombia + Burundi
The QC team selected Persephone's components after experimenting with no fewer than nine iterations. Its components are crafted from our freshest arrivals, offering the best of what's in season. The winning combination brings together two coffees from our current Single Origin menu: Burundi Yandaro and Colombia Nariño Castillo. Together, they deliver a balance of juicy, tart, and sweet flavors that perfectly capture the essence of spring.
