The Canales Family
Daniel Canales made history in 2004 as the first grower to win a Cup of Excellence competition with an organic coffee. We proudly purchased that groundbreaking lot and have been collaborating with the Canales family ever since, making this one of our longest-standing Direct Trade partnerships. Over the past two decades, they’ve become a symbol of how organic farming and a commitment to quality-focused innovation can create lasting impact. Today, Daniel’s three sons—Milton, Norman, and Donal—carry on the family tradition at Los Delirios, ensuring its legacy of excellence. From their historic Cup of Excellence win to their enduring commitment to sustainability and innovation, the Canales family remains a cornerstone of Nicaragua’s coffee sector.
Los Delirios
Los Delirios has transformed dramatically since Daniel Canales' father, Don Pio, first established the farm in 1958. Under Daniel’s leadership, it has expanded from its humble beginnings into a thriving 400-acre estate, composed of smaller farms integrated around the original property. This growth has allowed the family to create more jobs for their neighbors while upholding the quality standards that earned them the 2004 Cup of Excellence. The family’s investments in innovation include advanced wet milling practices, a state-of-the-art dry mill, and an extensive network of raised and shaded drying beds. Their renovation efforts feature
high-quality cultivars like Geisha and Pacamara, showcasing their dedication to pushing the boundaries of coffee excellence.
However, the story of Los Delirios is about more than exceptional coffee. The farm’s transformation reflects a commitment to environmental stewardship and social impact. By turning former tired pasturelands into coffee-based agroforestry systems, the Canales family has created biodiverse ecosystems that sequester carbon, regulate water cycles, and provide habitats for wildlife. Their efforts have generated meaningful employment and environmental benefits for their community.
Pacamara
A cross between two varieties, Pacas and Maragogipe (pronounced mara-go-hee-peh), Pacamara is hard to grow and can be hard to roast, but it has the potential to shine with expressive fruit notes, making it well worth the effort. Upon first glance, you'll notice that Pacamara beans are obviously large in size when compared to the average coffee bean. They borrow this trait from their Maragogipe side, which is also commonly known as the "elephant bean".
From a sensory perspective, this season's Pacamara from Los Delirios is an approachable coffee with caramel-like sweetness and soft citrus. Originally planted as a father-and-son collaboration between Daniel and Milton, it is returning to our Single Origin lineup for the eighth time.
