The Variety
Kenya = Smallholders
There are over 600,000 smallholder farmers in Kenya who grow coffee on less than 3 hectares of land. Smallholders make up ~99% of coffee farmers in Kenya. Typically, these smallholders participate in a Farmer Cooperative which operates a "factory" that receives, processes, and dries coffee cherry.
The Kii Coffee Factory
The Rungeto Farmers Cooperative Society owns and operates the Kii Factory. Built in 1995, the Kii Factory sits at the base of Mt. Kenya (which is the second highest peak in Africa after Kilimanjaro). The snow capped Mt. Kenya supplies cold, fresh water to the Kii River which runs near the factory and gives it its name.
A portion of Rungeto's 850 members deliver cherry to the Kii Factory each day where it is sorted, pulped, fermented, washed, and then dried on raised beds. The parchment is turned throughout the day and covered at night to ensure slow, uniform drying.

Why AA?
