The Variety

Producer Types

Many of our coffees at Intelligentsia come from single farmers whose operations range in size from small -- say, 1 hectare or less -- to relatively large -- for example, 45+ hectares. Current offerings like El Salvador Malacara (medium/large farm) and Peru El Romerillo (small farm) are great examples of the range in scale and scope of single farm operations. 


We also source coffees from cooperatives, coffee washing stations, and other organizations that buy from individual farmers and aggregate their coffee to build quality, exportable lots. In these scenarios, the lots we purchase may contain coffee from several individual farmers whose coffees are classified and separated based on attributes such as quality, density, processing method, or even specific flavor profiles.The diversity of our buying program reflects the diversity of the coffee industry and the various actors in the supply chain. 

Coopedota

In the case of this coffee, it was offered to us by our long-term partners at Coopedota in Costa Rica. Of the different producer types we work with, Coopedota falls into the cooperative category. What defines a cooperative and may differentiate it from some of the other producer types mentioned is well-captured by this definition from the International Co-operative Alliance: “[an] autonomous association of persons united voluntarily to meet their common economic, social, and cultural needs and aspirations through a jointly owned and democratically-controlled enterprise.”

Originally established in 1960, Coopedota isn't just any cooperative; it is one of the most successful and influential cooperatives in the coffee world. Since their inception, they have continued to push the boundaries of quality, innovation, environmental sustainability, and value creation for members. Managed by a democratically elected group of representatives who are all farmer-members of the organization, the cooperative provides a variety of crucial and otherwise hard-to-access services to its approximately 800 members, including training and technical agricultural assistance, access to financing, centralized coffee processing, quality control, and market access through commercial and marketing teams. 

In other words, Coopedota is exactly the kind of values-driven organization we strive to work with. We sourced our first lot from the cooperative in 2005, which means next year we'll celebrate a huge milestone: 20 years of partnership!
 

Lot Selection and Composition

Throughout the season, Coopedota cups thousands of coffee from members and uses physical and sensory quality attributes to compose lots that meet standards across our menu of blends, single origins, and special selection lots. To build this lot, Coopedota selected coffee from six neighboring farms planted with Caturra and Catuaí based on quality and cup profile. The farmers who grew this coffee are Guadalupe Vega, Ismael Fallas, Ana Isabel Brenes, Julio Calvo, Mauricio Jiménez, and Alex Mauricio Madrigal.

Selected for our single origin menu, Calley Copey was processed in the honey style, which leaves more of the coffee pulp intact during the washing and drying phases, thereby enhancing sweetness and depth in the cup.
