The Variety
Blend Component 1: Kirite Washed
Within Ethiopia, we have yet to find anyone producing more flavorful coffees more consistently than the Adinew family operation, METAD. As operators of the first CQI-certified lab in Africa, the highly trained teams at METAD washing stations apply best-in-class quality control processes to create opportunities for thousands of smallholder coffee growers. We first partnered with METAD just over 10 years ago, and have continually featured exceptional lots from their network of regional washing stations.
Blend Component 2: Alaka Natural
Ethiopia’s naturally-processed coffees are so exceptional that, years ago, we broke from an Intelligentsia tradition of serving only washed coffees to make room for them on our menu. Since that time, the knowledge of how to best process natural coffees has continued to spread, with many producers looking to Ethiopia as their guiding star.
Also currently featured on our Single Origin menu, this lot was grown by members of the Alaka Farmers Association and processed at METAD's regional Guji washing station. After farmers deliver their coffee cherries, they are sorted for ripeness, rinsed in clean water, and spread across a vast network of raised drying beds. They are gently dried and periodically rotated by hand over the course of 2-3 weeks, with the fruit of the cherry fully intact. Once dry, the coffee is sent to the mill where the remaining husk of the cherry is removed before the coffee is sorted and processed for export.
Blend Component 3: La Maravilla
Situated in the rugged mountains of Huehuetenango, this farm truly lives up to its name, which means "marvel" in Spanish. This dream farm, established in 1997 by Mauricio Rosales and his father, started humbly on a remote plot accessible only by a narrow horse path. Over the years, they carved out roads, built drying patios, and constructed a wet mill, transforming the land into a showcase for exceptional coffee. Mauricio has continued his father's dream, earning La Maravilla international recognition, including multiple wins in Guatemala's prestigious Cup of Excellence competition. We first visited La Maravilla in 2003 and we have purchased their coffee every year since. We're going on twenty years and are still finding new lots with new flavors.
On the farm, Mauricio primarily cultivates traditional varieties like Bourbon, Caturra, Pache, and San Ramón. This lot is a variety separation featuring cherries harvested from La Maravilla's San Ramón trees.
